This recipe was based off of the Stuff I Make my Husband blog. That recipe has actual amounts of spices (and a few different ones), I just wing it.
Mush together in a bowl:
1 lb. ground pork
handful of frozen blueberries. (could use fresh. don't need to thaw)
a couple shakes of the following:
sage
paprika
salt
thyme
coriander
nutmeg
pepper
The recipe calls for cooking it in a skillet, I just formed patties with my hands and baked in the oven at 425 F for 21-23 minutes. I had it on the low rack, and the juices that were running off started to burn.
I can't believe I've never made my own breakfast sausage blends before, these are awesome!
Dear Self: I made 11 patties, needs a big cookie sheet to cook them on.

Crockpot Frittata
Got the method from Paleo Slow Cooking by Chrissy Gower
Line a crockpot with parchment paper. (Cut the corners so you can fold it in, don't cut them so deep that when filled with about an inch of stuff, the stuff would leak over a cut, don't have edges hanging over the top. It's easy.)
Put in:
A layer of purple sweet potatoes (happened to already be cubed and cooked)
A layer of bok choy greens
10 eggs, whisked.
Cook on low. The book said about 2 hours, check at 1.5 hour to see how it's cooking. My crockpot took closer to 2.5 hours. Really good. The parchment paper method worked really well, minimal mess to clean up. (Always a bonus).

Sausage, Spinach, Cauliflower (Fewer Eggs) Bake
Got this recipe idea from The Prime Pursuit and made a few additions/omissions.
Ingredients:
1 head cauliflower
1 medium zucchini, chopped
1 package pre-made sausage, chopped (Or make your own. 1 lb.)
5 cups-ish spinach
4 eggs.
Rice the cauliflower. And do it with this method, from Big Red Kitchen. (In a blender with water, then strain. Super, super easy. Way better results and much faster than anything else I've tried.)
Melt some coconut oil in a pan, and saute the cauliflower bits until they are browned. Remove
Cook the sausage in the same pan. Remove
Cook the zucchini and spinach (until the spinach wilts) in the same pan. Remove, squeeze water out.
Combine all ingredients in a baking dish along with 4 eggs.
Cook at 350 for 45 minutes.
Super good!

Coconut Flour Waffles
These were pretty delicious, and basically taken from The Food Lovers Primal Palate. Their book is awesome, by the way.
1/4 cup coconut flour
4 eggs
splash of milk (their recipe called for 1 T coconut milk, I didn't feel like opening a can for so little, so I just used some raw cows milk that I happen to be trying right now.)
little bit of baking soda
more than a little bit of cinnamon
Whisk it all together, cook on the waffle iron.
They were really, really good, more like regular waffles than the banana-almond flour combo. (Which is also good, in it's own way.)
Recommended!

Zucchini-Sweet Potato Patties
These are really just another version of these zucchini patties.
Grate a medium zucchini and 1/2 of a medium sweet potato.
Mix half of this together with an egg, salt, and pepper.
Grease/oil/spray a skillet over medium high heat and spread the mixture out somewhat thin.
Cook for a while on one side (several-five minutes), flip and cook on the other side.
Ate it paired with some leftover salmon and blueberries.
Go breakfast!

Eggs in a Nest
This was inspired by Barbara Kingsolver's Animal, Vegetable, Miracle book.
Saute half an onion in a little bit of olive oil
Add half a red pepper after a few minutes
Add a HUGE bunch of greens - mine was a mixture of spinach, kale, and collard greens.
Add a small head of cauliflower, whirred through the food processor.
Add a little bit of water, if you feel like it is needed.
Cover and let the greens wilt for 5-10 minutes.
Make little depressions in the mixture to crack the eggs into. I put in 5 eggs, should have put in 1-2 more.
Cover again and let eggs cook for 3-5 minutes, depending on how firm you like your egg yolks.
Serve!

Sweet Potato Waffles
This recipe is a riff on the paleo pancake recipe, subbing sweet potato for the banana, inspired by Stesha at the gym....
1.5 sweet potatoes, baked in the microwave, skinned and mushed
2 eggs
bunch of cinnamon
Enough almond flour to get a dough-ish consistency. I'd guess maybe 1/8-1/4 cup.
Mix together, throw on waffle iron. Yummy.

Sausage and Vegetable Egg Bake
This will be breakfast for the next bunch of mornings:
Peel and dice a medium sweet potato.
Cut a head of broccoli into florets.
Bring a some water to a boil, drop the sweet potato and broccoli in, keep at a simmer for 15-20 minutes.
Meanwhile, chop an onion and a medium zucchini or yellow squash. Saute in olive oil, when the onions are translucent, add some sausage (mine was ~3/4 lb). I didn't add any spices, since the sausage was pre-spiced Italian-style.
Heat the oven to 350.
Drain the sweet potato and broccoli, add all the ingredients to a greased 8x8 glass pan. Beat together ~8-10 eggs or equivalent in whites. (I think I used 7 whole eggs and 5 egg whites*.) Pour over the other ingredients and stir a little bit.
Bake at 350 for 45-50 minutes, until it is all set up.
Unfortunately, this did dirty a fair number of pans and bowls. Blast.

* The reasoning behind using the egg whites only for some of the eggs is to up the protein percentage a little bit, as I plan on eating some of this with avocado, so the fat all balances out in the wash anyway, and some of it post-workout, and I like more protein post-workout.

Breakfast - Eggs and Leftovers
Common themes:
What I eat in general: Leftovers, incorporated however I can.
What I eat for breakfast: Eggs + veggies (usually sauteed onion and pepper) scrambled together.
This can definitely make my meals look random. Today, I went for something of a combo. I have leftover chicken that I shredded from the whole chicken yesterday, and leftover broccoli slaw from the fish tacos Saturday.
I poached up two eggs and served them on a bed of chicken, slaw, and some spinach, and cracked some pepper on top.
How my awesome dad taught me to quick-and-easy poach two eggs:
In a small frying pan (with a fitting lid), spray some non-stick, crack two eggs in, then pour enough water in to cover the egg white. I don't completely submerge the yolks, for no real reason. I think in my case, this was only about 6 oz of water, an un-measured wild guess. Cover, and cook on the high range of med-high for a few minutes, until your yolks reach your desired state of done-ness.

My review: Surprisingly good. I liked the crunchy texture-egg combo more than I thought I would.
Lunch yesterday and today was/will be fish tacos. And, what do you know, we have a request: "Some sort of recipe with that bok something vegetable." Bok something, look for it in a few days.
